Masale what made with some traditional Indian spices and some vegetables , this masala that is not too spicy but still taste awesome. In Maharashtra it served with Boondi or jalebi or besan burfi. * Grind Masala Powder
Bay leaf : 2
Cumin seed : 1 tbsp
Coriander seed : 1 tbsp
Green cardamom : 3
Star anise : 1
Cinnamon stick : 1 inch
Black cardamom : 1
Dry coconut : 1/4 cup
Dry red chili : 3
Black pepper : 5-6
Cloves : 3 -4
Step :
1. Dry roast all the ingredients above and grind it and make masala powder.
* Green paste
Ginger: 1 inch
Garlic : 4-5
Fresh coriander : handful

1. Grind all the ingredients above and prepare green paste
* For Masala bhat preparation
Oil : 1 tbsp
Mustard seed : 1 tsp
Bay leaf : 2
Sliced Tondli : 1/2 cup
Sliced carrot : 1/2 cup
Curry leaves : 10-12
Asafetida : 1/4 tsp
Cube cut potato : 2 medium size
Bringel / vange : 3-4
Cauliflower : 1/2 cup
Green paste
Green pease : 1/2 cup
Masala powder : 2 tbsp / as per state
Rice : 1 cup
Turmeric powder : 1 tsp
Red chili powder : 1 tsp (optional )
Garam masala : 1/2 tsp
Cashew : 10 - 12
Peanuts : 7-8
Water : 2 - 2 1/2 cup
Salt
Sugar : 1 tsp
Ghee : 2 tbsp
* For garnish
Fresh grated coconut
Fresh chopped coriander
Step :
1. Add oil in a pan , then add mustard seed and let it crack, then add bay leaf , sauté and then add sliced tondlli , carrot , curry leaves and asafetida
2. Let it fry little then add cube cut potato , bringel , cauliflower and mix it well
3. After 1 min. Add green paste in it and mix it well
4. Add green pease , grind masala powder we prepared and mix it well
5. Then add washed rice and mix it well, add turmeric powder , garam masala powder and mix it well
6. Red chili powder is optional , add cashew and peanuts , and mix it well
7. Add water salt and sugar mix it all well and close the lid and let it cook on medium to low flame for 10 min.
8. After 10 min. Check the rice is cooked or not , if require add little hot water , add Ghee on the edges and close the lid and let it cook on low flame for 5-10 min.
9. Once done turn off the flame , mix it all and let it set for 10 min.
10. After 10 min. Masala that is ready to serve ,while serving garnish with some fresh grated coconut , chopped coriander and little ghee on top
