We look at the journey from grocery store-bought Red Fuseau tubers, to tiny sprouts, baby plants and all the way to a full grown Jerusalem artichoke plant, grown in fabric containers. Our tallest reached 8 feet in height! This video may be useful to anyone interested in growing sunchokes in pots or containers.

I've added the months and timings to give a time frame idea of when to plant your Jerusalem artichokes and what to roughly expect at different stages of growth. Here in the UK where I grew them, we plant them out in March when temperatures start to be over 10 degrees celsius (50 F). If you're elsewhere in the world like the USA, South Africa, Australia or NZ / New Zealand, optimal times for plantings may differ. The rate your plants grow at may also differ depending on amount of sun, temperature and other factors.
