Murgh Nargisi:
Ingredients
Chicken 1 kg
Onion ground 250 gm
Yogurt 250 gm
Ginger garlic paste 1 tbsp
Boiled egg 4
Poppy seeds 1 tbsp
Almond 1 tbsp
Desiccated coconut 1 tbsp
Green cardamom 4
Cloves 4
Bay leaf 1
Salt 1 tsp
Chili powder 2 tsp
Coriander powder 2 tbsp
Allspice 1 tsp
Oil 1 cup
Coriander as required
Green chilies as required
Method
Heat 1 cup oil in a pan, add ground onion, ginger garlic paste and chicken pieces, and fry well. On a hot griddle dry roast together poppy seeds, almond, desiccated coconut and green cardamoms, grind finely and add to yogurt, mix well. Now add cloves, chili powder, coriander powder, allspice and salt, mix well and add to the chicken mixture, cover and cook for 20 mins. Now add 1 glass of water and green chilies, cook for 10 mins. Dish it out, garnish with 4 boiled eggs. Lastly garnish with coriander leaves and chopped green chilies. Serve hot.
Aalu chanay ki achari biryani:
Ingredients
Potatoes 2
Chickpeas boiled ½ kg
Rice boiled 1 kg
Yellow color pinch
Mint leaves bunch
Oil 1 cup
Bay leaves 2
Star anise 4
Green chilies 6
Green cardamom 6
Plum 50 gm
Mixed pickle 250 gm
Yogurt 250 gm
Tomatoes 250 gm
Onion 250 gm
Black pepper whole 1 tsp
Turmeric 1 tsp
Kewra water1 tsp
Chili powder 1 tbsp
Ginger garlic paste 1 tbsp
Black cumin seeds 2 tsp
Coriander powder 2 tsp
Nutmeg & mace grinded ½ tsp
Salt to taste
Method
Peel and cut 2 potatoes into cubes. Heat 1 cup oil in a pan, add potato cubes and fry till golden brown. Remove potatoes and keep aside. In the remaining oil, add 250 gm chopped onion and fry well till its color turn into golden brown. Take out some of fried onion and keep aside. Now in pan add 1 tbsp ginger garlic paste, ½ kg boiled chickpeas, 1 tsp turmeric, 2 tsp coriander powder, salt to taste, 2 bay leaves, 50 gm plum, 1 tsp black pepper, 2 tsp black cumin seeds, 6 green cardamoms, ½ tsp ground nutmeg and mace, fry well. Now add 250 gm whipped yogurt, mix well, spread 250 gm chopped tomatoes, 1 bunch of chopped mint leaves and 6 green chilies, also add in fried potatoes. Now make a layer of 250 gm mixed pickle, top with boiled rice, sprinkle a pinch of yellow color dissolved in 1 tsp kewra water on top of rice. Also spread remaining fried onion on top, simmer for 30 mins, mix well and serve hot.
Three fruit raita:
Ingredients
Yogurt ½ kg
Mango chopped 1
Peach chopped 1
Pineapple 1 cup
Sugar 1 tbsp
Cumin crushed ½ tsp
Black salt ½ tsp
Salt ¼ tsp
Chopped mint ¼ cup
Schezwan sauce 1 tsp
Method
Mix all together, serve chilled.
