far-left just edible to middle sweeter then furthest right is riped. the best taste is when the fig is picked at the correct time. the sweetness is perfect. when picked a little too soon its is not juicy enough nor sweet enough. look for fragile to touch wrinkles and cracks in the skin and deep red strawberry tones.

Desert King is grown in Seattle, WA PNW it is our favorite. Regardless of a cool short summer, it will ripen, unlike other varieties which require long hot summer. This is reliable with large fruit. It is sweet pink flesh and green soft & thin skin. I love the size and its flavor. The tree is productive it doesn't split until its overly ripen and it fragile to transportation at that point. Desert King may be common here but it is King for a reason. If you had to grow just one fig and you are in PNW then you must grow a Desert King.
