Zayka Ka Tadka
Recipe

Ingredients
FOR PREPARING DRY RED CHILLI PASTE :
- Oil - 1 tsp
- Fenugreek seeds / Methi dana - A pinch
- Dry red chilli / Sukhi lala mirchi - 8 to 10
- Curry leaves / Curry patta - A few
- Asafoetida / Hing - A pinch
- Salt - As per taste
- Gooseberry / Amla - 2 Chopped
- Raw mango / Kachcha aam - 1/2 Cup chopped
FOR PREPARING AMLA MANGO RICE :
- Oil - 3 to 4 tsp
- Mustard seeds / Rai - 1/2 tsp
- Cumin seeds / Jeera - 1 tsp
- Roasted peanuts / Mungfali - 2 tbsp
- Black gram / Urad dal - 1/2 tsp
- Bengal gram / Chana dal - 1/2 tsp
- Turmeric powder / Haldi powder - 1 tsp
- Dry red chilli / Sukhi lal mirchi - 1 Cut into small pieces
- Asafoetida / Hing - A pinch
- Cooked rice / Pake huye chawal - 3 Cups
- Salt - As per taste
- Coriander leaves / Hara dhaniya - A handful
- tsp = teaspoon
- tbsp = tablespoon
Instructions
FOR PREPARING DRY RED CHILLI PASTE :
- Heat oil in a pan. Add fenugreek seeds and dry red chilli. Mix well and roast it for a few seconds on medium flame.
- Further, add curry leaves and asafoetida. Mix well. Roast it for 1 to 2 minutes on medium flame.
- Transfer it to a grinding jar. Add salt. Grind it for a few seconds and prepare its paste.
- Now add gooseberry and mango pieces. Grind it for a few seconds and prepare its coarsely ground paste. Keep it aside.
FOR PREPARING AMLA MANGO RICE :
- Heat oil in a pan. Add mustard seeds, cumin seeds, roasted peanuts, black gram, bengal gram, turmeric powder, and dry red chilli. Mix well. - Roast it for a few seconds. Add curry leaves. Mix well.
- Further, add asafoetida and the ground paste of gooseberry and raw mango. Mix well. Roast it for 2 to 3 minutes on medium flame.
- Now add cooked rice. Mix well. Add a little salt mix well and garnish it with coriander leaves. Once done, transfer it to a serving plate.
- 'Mavinakayi Nellikai Chitrana | Amla Mango Rice' is ready to be served.
