Ingredients
- Pork cutlet, butterflied and flattened
- 1 egg
- 1 cup panko bread crumbs
- 1/2 cup flour
- Seasoning of your choice (I used Old Bay, salt and pepper)
- 300ml grapeseed oil for frying
- Fresh peas
- Mint
- 30g dutch goats cheese
- 1 lemon
Mustard dressing
- 1 tbsp mustard
- 2 tbsp olive oil
- 1/2 tbsp honey
- Salt to taste
- 1 tbsp water
Method
1. Flatten your pork cutlet and season both sides.
2. Dust in flour, followed by a dip in the beaten eggs, then dip in the panko crumbs - press down to get good coverage.
3. Mix all the dressing ingredients together and set aside.
4. Fry the pork cutlet in 160°c oil until it's golden on both sides.
5. In a small bowl, dress the peas and mint with olive oil, salt and lemon zest.
6. Drizzle the pork cutlet with the mustard dressing and garnish with peas and goat's cheese.
