“Mexican Wedding Cookies” have a lot of different names but the most important thing is that they are super simple to make, don’t take a lot of ingredients, and taste great! They also make for a great gift! I hope you give these a try and let me know in the comments what you think!

Ingredients
- 226g (1 cup) Room Temperature Butter
- 210g (1 3/4 cups) Powdered sugar
- 1/4 tsp salt
- 2 tsp vanilla extract
- 249g (1 3/4 cups) All-purpose flour
- 110g (1 Cup) Chopped Walnuts or Pecans
Directions:
1. In a large bowl add in your butter, salt, vanilla extract, flour, chopped nuts, and 60g (1/2 cup) powdered sugar.
2. Using a mixer or your hands mix until fully combined and you see no wet flour or powdered sugar.
3. Roll about one tablespoon of dough into smooth balls and place on a pan lined with parchment paper. Continue with the remaining dough.
4. Bake at 175C (350F) for 12-15 mins or until slightly starting to brown.
5. Let cool for about 5 mins or until warm. Then toss each ball in more powdered sugar and set aside. Once the balls are completely cooled, toss them in powdered sugar one more time.
