Gingerbread Cookies Recipe 🥣
We have been using this recipe for over 10 years!
The dough must be prepared in advance, the day before baking.
Inverted Syrup 🫕
350 g brown sugar
155 ml hot water
2/3 tsp lemon juice 🍋
1/4 tsp baking soda
Dough Ingredients 🥣
250 g unsalted butter 🧈
1+3/4 tbsp brown sugar
3 eggs 🥚
5.5-6 tbsp flour
1/2 tsp baking soda
2 tsp cinnamon
2 tsp cloves
2 tsp ginger
a pinch of nutmeg and cardamom
First, you need to prepare inverted syrup:
Dissolve sugar in hot water. Bring to a boil, then add lemon juice 🍋 . Cover tightly and simmer over low heat in a heavy-bottomed saucepan for 45 minutes. After that, cool the syrup and add a soda solution (dilute the soda with a dessert spoon of water). As soon as the foaming is over, the syrup is ready.
Now let's prepare the dough.
Heat the inverted syrup to a boil and add the butter. Beat eggs with sugar and combine with the remaining warm syrup. Mix well to dissolve the sugar. Add soda, and gradually, pouring through a sieve, stir in the flour. Place the dough in the refrigerator for a day.
Remove the dough to take the required amount for rolling, and put the rest back in the refrigerator. On a surface dusted with flour, roll out a piece of dough into a layer of about 5 mm, cut out the gingerbread cookies, transfer to a prepared baking sheet and bake at 375F (190C) for 7-9 minutes (don't overdry cookies)!
