This Video focusses on the manufacturing process of salami and in particular the order in which ingredients can be added to achieve good results. Sometimes there can be a tendancy to add all the ingredients in one go and then mix the whole thing until a homogenous sticky mixture is achieved. This is not the correct way to make a salami that can dry evenly. Over extraction of the soluable protein in the meat can inhibit the drying process and the fermentation process and you can end up with a salami without good or stable colour and insufficient PH drop.
