Have you ever had someone tell you that you need to soak the wood you're going to use to smoke your BBQ with in water beforehand? If you have, I'm here to tell you there is a better option...DON'T. I'm not sure why this BBQ myth has been around for so long and refuses to go away, but since it's apparently here to stay lets talk about why soaking your wood is not a good idea. Most of the time when people tell you to soak your BBQ wood they try to tell you that you will get more smoke out of it because it will take longer to burn up. I'm going to give them the benefit of the doubt here because if they tried this they probably did see what they thought was more smoke for a while. In actuality what they probably saw was first all of the steam cooking off of the wood. As we know water boils at 212 degrees and wood combusts at a much higher temp than that, so to get to the point where wood will burn we must first boil off any water. Following that we need to get to combustion, most of the smoke that we generate on our way to combustion is going to be full of impurities which are compounds that do not taste good on our BBQ. To get the best tasting smoke you really want that wood either right at combustion or like in the case of a stick burner pit, post combustion so the impurities are burning off and we are left with delicious tasting clean smoke.
