In today's video, join us as we dive into the world of Cold Fermented Pizza Dough! 🌬️ Ever wondered what makes a pizza crust so flavorful and complex? Look no further - it's all about the cold fermentation process! 😋
👩🍳 Kadee and I swear by this recipe, courtesy of the talented @brianlagerstrom. Big shoutout to Brian for this game-changer! 🙌 We usually let our dough chill in the fridge for a minimum of 24 hours, and the results are always worth the wait.
📋 Ingredients:
* 245g or 1 cup Warm Water (90-110℉)
* 4g Instant Dry Yeast (1 rounded tsp)
* 7g or 1 ½ tsp Sugar
* 20g or 1.5 tbsp Olive Oil
* 9g or 1 1/2 tsp Salt
* 375g or 2 2/3 cups 00 Flour (or bread flour)
👩🍳 Instructions:
* Wake up the yeast by combining water, yeast, and sugar. Let it sit until bubbly.
* Mix flour and salt in a mixer; add the yeast mixture and olive oil. Mix for 3 min on low, then 4 min on high.
* Check the dough's stretchiness, cover, and let it rest for 45 minutes.
* After the rest, perform stretch & folds, shape into a ball, and refrigerate for 6-72 hours.
* Bring the dough to room temperature for 90 minutes before making your pizza.
🍽️ Pizza Size: This recipe yields a large 16-inch Neapolitan-style pizza or 2 smaller pizzas.
