Tamarind & Chilli paste and Pickle Chilli are very popular condiment in Mauritius, specially served with biryani, dhall puri and curry.

Piment Tamarin
Ingredients
150 g Tamarind + 1/4 cup water (can add 1 TBSP more)
5 TBSP Sugar
5 Garlic Cloves (depending on the size, add more if smaller size)
5 -10 or 10 -15 Chillies (Red or Green) (Depending if you want the tamarind paste to be very hot)
2 TSP Mustard Seeds
1- 2 TSP Turmeric Powder
4 TBSP Oil
1 TSP Vinegar
1/2 TSP Salt
Oil (To cover the paste)
Note: Add more sugar and less chilli if you want it to be less hot.
We don't know if in Mauritius you have this product "Dijon - Moutarde a l'ancienne", but if have you can use it in the tamarind paste instead of Mustard seeds.
In Mauritius, 1 packet of tamarind is 300g but we use only 150 g in this video. Adjust the measurement if you are making for 1 packet.
Achard Piments
Ingredients
150 g Green Chillies ( set aside 2 -3 chillies )
3 - 5 Garlic Cloves
1 TBSP Tamarind + 2 TBSP Hot Water
1 TSP Mustard Seeds
1 TSP Fenugreek Seeds
1 TSP Sugar
1/2 TSP Salt
Note : In the video, we are using Thai long chilli for the Pickled chilli recipe which is not hot but you can use any of your preferred hot chillies for this recipe. We will suggest to let the pickled rest for
1-2 days then add oil.
