Here I'm showing how I smoke New York Strip steaks on my RecTeq RT700 and then sear them off on my Weber Charcoal grill.
Steps:
1) Bring steaks to room temp (step I didn't wait long enough for so it took a little longer )
2) Season to taste (sea salt, fresh ground pepper and garlic power is what I prefer)
3) Place meat on Smoker at temp btw 180 and 200
4) Pull steaks when internal temp is about 110
5) wrap in foil and rest for 10-15m (or while you prepare sear heat)
6) Bring Charcoal to as hot as you can get it
7) Dry meat with paper towel and re-season
8) place meat over coals for 1m, turn meat and another minute. Flip meat and repeat (total of 4m with 2m on each side)
9) This should bring you steaks up to 135 or so internal (Medium)
10) Plate up and enjoy the best steak ever!
Now, These were 1 and half inch steaks. If your steaks are thinner, you should lower your sear time or they will over cook.
