Emirati Chicken majboos | Chicken Machboos | Arabic chicken and rice
Ingredients:
Oil-1/3 cups ( 80 ml)
Chicken - 1 kg
Onion- 1 large or 2 medium ( finely chopped)
Ginger-1 tablespoon ( finely chopped)
Garlic-2 tablespoon ( finely chopped)
Curry leaves -4-5
Coriander leaves -1/4 cup ( finely chopped)
Tomatoes-2 medium ( finely chopped/ pureed)
Potato-1 medium
Chicken stock-1 cube ( optional)
Tomato paste-1 tablespoon
Lemon juice-1 tablespoon
Green chillies-5-6
whole Spices:
Bay leaves-2 or 3
Cardamom-4
Cloves-4-5
Cinnamon-1 inch piece
Dried lemon-3 ( make some cuts)
Spices:
Turmeric powder-1/2 teaspoon
Paprika - 2 teaspoon
Pepper powder-1 &1/2 teaspoon
Cumin powder-1/2 teaspoon
Coriander powder-1/2 teaspoon
Arabic spice mix-2 -3 teaspoon
Salt-2-3 teaspoon
Basmati rice- 3 cups (washed and soaked for 20-30 minutes)
Hot water-5 & 1/2 cup
Method:
1. Heat oil and saute the whole spices.
2. Add the chicken pieces and cook over high flame for 3-4 minutes each side.
3. Add the chopped onion and saute until transparent.
4. Add ginger, garlic, curry leaves and saute for 1-2 minutes.
5. Add the spices, tomatoes , dried lemon , tomato paste , potato and chilli.
6. cover and cook over medium flame for 10 minutes.
7. After 10 minutes add finely chopped coriander leaves, chicken cube and lemon juice.
8. Add 4 cups of hot water . cover and cook for 20-25 minutes.
9. After 20 minutes open the lid and add the washed and soaked basmati rice. Add 1& 1/2 cup more hot water.
10. At this stage check the salt and add more if needed.
11. cook for another 20- 25 minutes over medium low flame or untill the rice is done and the water is dried.
12. serve hot.
