15th August is the feast of our lady of assumption and is universally celebrated by Catholics. It’s a feast held dearly by the Goan catholic community. On the feast day , patoleo, a rice flour pancake stuffed with coconut jaggery and steamed wrapped in turmeric leaves Is normally prepared in a Goan catholic household and distributed among the neighbors.
I have fond memories of patoleos. Mama used to gather us and help her prepare it. The patoloes were steamed in a copper steamer called komfro and it was cooked on wood fire. It was so much fun. The aroma of the patoleos used to fill the house.
Getting turmeric leaves is quite a hassle in the UAE, thanks to my darling hubby, for getting the leaves for me.
Total Cooking time : 1 hour (5 hours soaking time)
Yields : 4 patoleos
Ingredients :
4 small turmeric leaves or 2 large turmeric leaves
1 cup raw red rice
1 cup grated coconut
3 to 4 pyramids of Goan palm jaggery (adjust as per taste)
Pinch of salt
¼ cup water
