1st Recipe
12 oz Fresh Cranberries
juice of 1 Orange - add water to make 1 cup of liquid
Zest of 1 Orange
1 Pear - pealed & chopped
2 - 6 oz packages Fresh Raspberries
1/2 tsp Cinnamon
1/4 tsp Cloves
1/4 tsp All Spice
1/4 tsp Nutmeg
2 Tbsp Grand Marnier (Optional)
4 Cups of Sugar
1 Pkg or 3 Tbsp low or no sugar pectin
Directions
First add the cranberries, juice of orange with water and orange zest
Cook to break down the cranberries and let them pop.
Add the pectin - stir together
Bring to boil - Stir regularly
Add all the spices
Add Pear
Add Raspberries
Add Sugar
Add Grand Marnier (optional)
Mix all together
Bring to boil that can't be stirred down. Rapid boil for 1 minute, this helps the pectin set the jam.
After 1 minute take off the heat and can it up.
#2 Recipe
12 oz Fresh Cranberries
juice of 2 Orange - add water to make 1 cup of liquid
1 Pkg or 3 Tbsp low or no sugar pectin
1/2 tsp Cinnamon
1/4 tsp Cloves
1/4 tsp All Spice
1/4 tsp Nutmeg
20 oz Cherries (I used Organic Frozen Cherries)
5 to 6 Cups of Sugar (depending on taste)
Directions
First add the cranberries, juice of orange with water
Cook to break down the cranberries and let them pop.
Add the pectin - stir together
Bring to boil - Stir regularly
Add all the spices
Add Cherries (cut in half and removed all pits)
Add Sugar
Mix all together
Bring to boil that can't be stirred down. Rapid boil for 1 minute, this helps the pectin set the jam.
After 1 minute take off the heat and can it up.
