READ THIS:
After re-watching the video, I realized I'm all over the map with the lowest temperature this grill will go down to. On a cold day while keeping the water tray topped up, I will get down to about 170-180 degrees f. The thermostat was faulty, which is why I was thinking it could get down to 130-40. After testing with a secondary thermometer, 170-180 is the lowest I seem to be able to get this grill.
