Today's recipe is my three meat chili a recipe I've been developing for a couple decades, that I'm sure you'll love. This chili is super delicious and very suitable for meat lovers.

2 lb of ground meat (I used 1 lb each of beef and chicken)
1 lb sausage (I used a Mexican style pork chorizo)
1 and ¼ cup dry beans (I used red kidney beans and pinto beans)
2 medium onions diced
10 cloves of garlic minced
1 red bell pepper diced
1 poblano pepper diced
3 green jalapeños diced
2 red jalapeños diced
2 serrano peppers diced
6 tomatoes diced
2 tbsp paprika
1 tsp ground cumin
1 tsp ground black pepper
1 tsp ground coriander
1 tsp ground cayenne
2 tsp ground chipotle (use smoked paprika if you prefer less heat)
1 tsp garlic powder
1 tsp onion powder
1 tsp kosher salt
1 tsp dried oregano
1 tbsp hot sauce (I used my home-fermented green hot sauce)
2 tbsp tomato paste
2 tbsp Worcestershire sauce
1 bunch cilantro, stems finely chopped, leaves reserved for garnish.
Soak the beans in water for at least 8 hours.
For the chili powder add the paprika, cumin, black pepper, coriander, cayenne, chipotle, garlic powder, onion powder, oregano and salt, stir to combine.
Place the meat in a hot stew pot, stir to mix and break up the meat, cook until the water from the meat has evaporated and it starts to brown.
Once the meat his Brown add the peppers onions and garlic and continue to cook until the vegetables have softened.
Add the chili powder and continue to cook for about 30 seconds to 1 minute until the spices release their aromas, stir in the tomatoes and cook until they've released some of their liquid.
Add the soaked beans and stir through. Add the beer, cilantro stems, Worcestershire sauce and enough water to cover and bring to the boil, once boiling add the hot sauce and tomato paste
Cover and simmer on medium low heat for about 2 hours or until the beans are tender
Once the beans are tender give them a bit of a mash to release some of the starch which will thicken the chili, taste for salt, and enjoy
