Sambar Recipe, Vegetarian /Dal Gravy, is a simple and traditional way of preparing for recipes like idli, thosai, rice and roti canai.
Ingredients
2 tbsp coconut oil / other cooking
0.5 tsp mixed spices or mustard seeds
0.5 tsp cumin seeds
5-8 shallots
3-5 dried chilies
1-2 sprig curry leaves
1 green chili
1/4 tsp asafoetida powder / hingu powder , optional
1 large potato, optional
1 large tomato
5 tbsp pre-cooked dal or can use precooked mung bean (cook 1 cup bean with 3 cups of water or till well done)
1 - 1.5 cups of water, depends how thick the gravy,
1 tbsp sambar powder, can easily get in grocery shop or can buy online
1/4 tsp turmeric powder
salt
chopped coriander leaves
Cooking method
Heat a pan with oil. Add mixed spices / mustard seeds and cumin seeds. Stir for 1 min using low heat. Add shallots and garlic. Change to medium heat. Sauté till onion change colour. Add dried chilies, curry leaves, green chili, potato, tomato, asafoetida, cooked dal, sambar powder, turmeric powder, salt and water (normally the gravy will thick after 3-5 hrs). Let it boil and cook till potatoes tender. Off the flame when gravy is thick slightly. Add chopped coriander and ready to be served.
