Quick & Easy Thotakura Fry | Andhra Amaranth Leaves Stir Fry
Thotakura Fry (Amaranth leaves fry) is a simple, healthy Andhra-style stir-fry that’s perfect with rice or roti. Try this easy recipe today!
Ingredients:
1. 3-4 garlic cloves (squashed)
2. 1 tablespoon cumin seeds (Jeera)
3. 3 dry red chilies
4. 1 bunch amaranth leaves (Thotakura), chopped
5. ½ teaspoon turmeric powder
6. ½ tablespoon salt
7. ½ tablespoon chili powder (optional)
8. Oil for frying
Preparation:
1. Heat oil in a pan.
2. Add 3-4 squashed garlic cloves and sauté for 20-30 seconds.
3. Add 1 tablespoon cumin seeds (Jeera) and 3 dry red chilies. Stir until crisp.
4. Add the chopped amaranth leaves (Thotakura) and sauté for a few minutes.
5. Cover and cook for 5 minutes until the leaves soften.
6. Remove the lid, add ½ teaspoon turmeric powder, ½ tablespoon salt, and ½ tablespoon chili powder (optional). Stir well.
7. Cover again and cook for another few minutes.
8. Serve hot with rice or roti!
