Baked chicken breasts with fresh peaches, zucchini over dirty rice pilaf.
Baked Chicken:
2 chicken breasts
Peaches
Zucchini
Salt
Pepper
Olive Oil
Bake the peaches, zucchini and chicken for just 20 minutes at 450 degrees and it will be perfect.
Rice Pilaf:
2 tablespoon olive oil
1 small onion, chopped finely
1 medium red pepper, chopped small
2 carrots, diced
3 clove garlic, minced
2 teaspoons blackening seasoning
1 teaspoon basil
1 (16 ounce) can red kidney beans
1/2 cup chicken broth
2 cups cooked brown rice
salt and pepper, to taste
4 green onions, sliced thin
PREPARATION
In a large skillet over medium heat, heat the olive oil then add the onion, green bell pepper, carrots, garlic, blackening season. Allow to heat, stirring, for about four to five minutes. Next, stir in the beans and the chicken broth, combining well, then stir in the cooked brown rice, cook for about ten minutes on low. about 15 minutes
Remove from heat and add sliced green onions and season with salt and pepper, to taste. Serve immediately.
Yield: 8 servings (1/2 cup per serving)
