71 Day Dry Aged Steak 3 Way Cook Off! Glen And Friends Cooking - Dry Age At Home - Reverse Sear Steak
Today we pull a 71 day dry aged striploin primal from the Dry Ager beef dry age cabinet. Dry Aged Steak doesn't cook the same way as 'fresh' does, so we thought we'd experiment with three ways to cook steak. We cook a sous-vide steak, cook a reverse sear steak, and cook a cast iron steak. I know some people like Guga Foods sous vide everything - but I'm not super hyped on the method of how to cook steak sous vide. This is a dry aged steak experiment where we sous vide steak and reverse sear steak, and cast iron fry steak.
All three steaks were cooked to a finished internal temperature of 125ºF
