Honestly, these Biscoff Brownies are so good, Jess really did drive 3 hours to make them with me! That is commitment. And you know what? We’d do it all over again tomorrow!
Luckily, the recipe is below, so the furthest you’ll have to go is a hop, skip and a jump to your kitchen…
🧁INGREDIENTS
150g vegan chocolate
160g plain flour
200g granulated sugar
1/2 tsp salt
60g cocoa powder
120g unsalted vegan butter, melted
2-3 tbsp smooth biscoff spread, melted + extra for the topping
1.5 tbsp vanilla extract
120ml plant milk
plus chocolate chips (optional)
1/2 pack biscoff cookies
👩🍳 INSTRUCTIONS
1. Preheat oven to 175C
2. Sift all dry ingredients
3. Mix plant milk with melted butter and vanilla
4. Drizzle in the melted Biscoff spread whilst beating with electric mixer
5. Gradually pour in melted chocolate whilst whisking
6. Slowly add dry ingredients to the wet ingredients (fold in, don’t blend otherwise it could result in a less fudgy texture)
7. Fold in the chocolate chips and Biscoff cookie crumbs. Transfer to s lined tray, top with more Biscoff spread and biscuits
8. Bake immediately at 175C for 18-20 minutes or until the brownie top is glossy.
