INGREDIENTS FOR MEATBALLS AND RICE RECIPE:
Ingredients for Koftas (Meatballs):
1. Ground beef - 1 LB/1/2 KG
2. Roasted Chickpea flour - 2 tbsps.
3. Salt - 1/2 tsp
4. Black Pepper - 1/2 tsp
5. Red Chili powder - 1/2 tsp
6. Coriander powder - 1 tsp
7. Garam Masala - 1/2 tsp
8. Fried onion - 1/2 cup
9. Green chilies chopped - 2
10. Fresh Cilantro chopped - 2 tbsps.
11. Ginger & garlic paste - 1 tbsp.
12. Lemon Juice - 1 tbsp.
13. Ghee - 1 tbsp.
14. Egg - 1
Ingredients for Kofta Pulao:
1. Oil - 1/2 cup
2. Cumin seeds - 1 tsp
3. Black peppercorns - 1 tsp
4. Green cardamom - 4 Black
5. Cardamom - 2
6. Cloves - 4
7. Bay leaf - 2
8. Cinnamon sticks - 2
9. Onion sliced - 1 medium size
10. Ginger & garlic paste 2 tbsps.
11. Red Chili Powder - 1/2 tsp
12. Salt - 1 tsp/per taste
13. Tomatoes chopped - 2
14. Plain whisked yogurt - 1/2 Cup
15. Green Chilies - 4
16. Fresh Cilantro chopped - 2 tbsp.
17. Garam Masala Powder - 1/2 tsp
18. Kewra Water - 1 tsp
19. Garam Masala - 1/2 tsp
20. Rice 2 Cups (Soaked for 30 minutes)
21. Water - 4 cups
MEATBALLS AND RICE RECIPE:
1. In a blender, take ground beef, salt, black pepper, red chili powder, coriander powder, garam masala, and lemon juice.
2. Add an egg, fried onions, roasted chickpea flour, ginger and garlic paste, ghee, green chilies chopped, and freshly chopped cilantro leaves.
3. Blend these ingredients well.
4. Take a plate and grease with oil.
5. Take a tablespoon of the blended meat in your hand and make meatballs.
6. Very gently make round balls of the meat.
7. In pan, heat oil and deep fry meatballs on medium flame.
8. Gently stir the pan to move meatballs in the pan.
9. When all the sides are brown and cooked, take out the meatballs and keep them aside.
10. In a wok, add oil, cumin seeds, black peppercorns, green cardamom, black cardamom, cloves, bay leaves, and cinnamon sticks and fry them for 30 seconds.
11. Add sliced onions and sauté them to golden brown color.
12. Add ginger and garlic paste and sauté for a minute.
13. Add chopped tomatoes, salt, sliced green chilies, and red chili powder.
14. Sauté them until tomatoes become soft.
15. Add plain whisked yogurt and fried koftas.
16. Mix well.
17. Add chopped fresh cilantro leaves and sauté for 2 minutes.
18. Add water and kewra water.
19. Mix it.
20. Cover the lid and let it cook for 10 minutes on low heat.
21. Now, add rice (soaked for 30 minutes)
22. Stir it.
23. Cover the lid and cook for 5 minutes on medium heat.
24. When the water evaporates, uncover the lid.
25. Garnish with fresh cilantro leaves, garam masala, and green chilies.
26. Cover with a foil or kitchen towel.
27. Cover the lid on top of it and cook on low heat for 20 minutes.
28. Uncover the lid and mix the rice gently.
29. Dish out the rice.
30. Your delicious Meatballs and rice recipe is now ready!
