INGREDIENTS
1Tbs cooking oil ( used avocado )
1 Red onion, peeled and pureed in a blender, optional
1 Tbs Garlic ginger paste
1 Tbs coriander powder
1 Tsp cumin powder
1/2 Tsp chili powder, adjust to your taste
1 Tsp turmeric
1 Tsp garam masala
1 bay leaf
1 Tsp tomato paste
1/2 cup tomato puree or 2 ripe tomatoes finely diced
1 Tsp vegetable base
2 cans chickpeas ( about 30oz )
1/2 Reserved chick peas water ( aqua faba )
Water to cover chickpeas. as needed
1/4 cup cilantro, chopped
2 scallions ( green onions ), chopped whites and greens separated
