This sandwich is so simple but in-season tomatoes are so good, you really don't need to add much else! 🍅🍅🍅 Toast bread, rub with garlic, slice your tomato into nice thick pieces, slather with gochujang "mayo" and add flaky salt and black pepper.
Gochujang "Mayo"
- 2 tbsp vegan may (or use tahini whisked with water to thin)
- 1-2 tsp maple syrup
- 1 tbsp gochujang
- 2 tsp rice wine vinegar or fresh lemon juice
