Ingredients:
1 tbsp Oil
1 tsp Cumin Seeds
1 tbsp chopped ginger
1 tbsp chopped green chilli
½ cup grated Carrots
½ cup boiled & crushed green Peas
½ cup grated Cauliflower
Salt to taste
1 tsp Turmeric Powder
1 tsp Red Chilli Powder
1 tsp Coriander Powder
A pinch of Garam Masala
1/4 cup boiled & mashed Potatoes
Atta Dough
Oil
Butter as accompaniment
Method:
Take a pan. Put some oil and add cumin seeds. Once it crackles, put ginger and green chillies and sauté
for a while. Then add all the vegetables and masalas one by one and combine everything together. Once
it is cooked and dry take it out of the pan. Now take a small portion of the atta dough. Make it round
and flat in shape from the edges keeping the middle portion thick. Put a generous amount of the mixed
veg stuffing in the middle section of the flat dough and then wrap it from the edges so that all the
stuffing should be inside the dough of the paratha. Now make a nice ball shape and sprinkle some flour
dust on it and then roll out the dough into a nice flatbread just like roti or Indian bread. Repeat the
same. Take a Tawa and put it on the flame. Let it hot for some time. Then add the flatbread onto the
Tawa. Once it is cooked from one side flip it to another side. Put some oil on the cooked side and then
repeat this again on the other side. Your mixed veg paratha is ready. Serve Hot along with a big dollop of
butter. Enjoy!
