The word "Ton" refers to pork, while "Katsu" refers to breaded and deep-fried meat dishes.
In Japan, the word "Katsu" generally refers to Tonkatsu.
For example, Katsu curry, Katsudon, etc.

-ingredients-
[Serves 2]
- 250g(8.81oz) pork loin(2cm(0.78inch)) ×2
- salt(0.8% salt by weight of meat)
- black pepper
- oil
[batter]
- 1 egg
- 1 tsp(4g)(0.14oz) oil
- wheat flour
- white bread
-Method-
[Chapter 1: Preparation of Tonkatsu]
-Cut the pork loin into 2cm (0.78inch) thick pieces.
-Cutting the muscle in meat.(Sujikiri)
-Sprinkle the meat with 0.8% of its weight in salt and refrigerate for 30 minutes.
-Wipe off the surface moisture.
-Sprinkle pepper on both sides.
[Chapter 2: Making batter]
-Place the bread in a food processor to make Nama Panko(fresh bread crumbs).
-Mix 1 egg and 1 tsp of oil well.
-Pour to a large container.
[Chapter 3: Coat in batter]
-Coat pork loin with flour, egg and Nama Panko(fresh bread crumbs).
[Chapter 4: Deep-fry]
-Place the battered pork loin in room temperature oil.
*The amount of oil should be enough to cover the Tonkatsu with oil.
-Cook over medium heat for 10 minutes.
-Measure the temperature of the oil and when it reaches around 100℃(212°F), flip the tonkatsu over and fry for 3 minutes.
*If the temperature is below 100°C(212°F), increase the heat.
-Remove the Tonkatsu from the oil and place it upright.
-Heat the oil over high heat and bring the temperature of the oil up to 180°C(356°F).
-Add the Tonkatsu and remove from the oil when the bread crumbs are nicely browned.
-Place upright and let stand for 3 minutes to drain the oil.
-Cut the Tonkatsu and serve it with plenty of shredded cabbage.
-ITADAKIMASU!!
