Robyn on the Farm's Monkey Bread Recipe:
Dough:
1 c warm milk
¼ c warm water
2 Tbs melted butter
½ tsp vanilla extract
¼ c sugar
3 ¼ c all-purpose flour
2 tsp salt
2 ¼ tsp yeast
Brown Sugar Coating:
1 c packed brown sugar
2 tsp ground cinnamon
½ c (1 stick) melted butter
Glaze:
1 ½ c powdered sugar
3 Tbs milk
1 tsp vanilla extract
Instructions: Place ingredients for dough into bread machine bread pan in order listed. Set to dough cycle. Check your ball of dough a few minutes in to check to be sure all ingredients are incorporated and your dough looks smooth, not too sticky, wet, or dry (see video). When the dough cycle has completed in 1.5 hours, turn dough out onto counter, press out, and divide into 64 pieces (8x8). Prepare the brown sugar coating. Roll dough into balls, dip in butter, and roll in cinnamon/sugar mixture. Place each ball of dough into well-oiled bundt pan. Let rise (covered with plastic wrap) for 1-2 hours, or until the dough reaches the top of the cake pan. Bake in 350 oven for 35 minutes (lightly cover with foil about 5-10 minutes before it's done if browning). It is important to let this bake the full 35 minutes so that it is not doughy on the inside. Once removed from oven, flip over bundt pan onto a plate or foil. Do this within 5 minutes of removing from oven so it doesn’t begin to cool and stick. Prepare powdered sugar glaze, drizzle on top, and enjoy your monkey pull-apart bread!
Make ahead instructions: Once you’ve coated your balls of dough in the brown sugar glaze and placed them in your bundt pan, cover with plastic wrap and put into the refrigerator for 12-18 hours. When you’re ready to bake the monkey bread, let come to room temperature and rise, I always allow 2.5-3 hours for this, but it depends on the temperature of your kitchen, etc. You could place in a warm oven (turn onto 350 for 1.5 minutes, then turn OFF the oven and let your bread rise in there) if you need to rush this step. Once risen, bake as described above. Another option is to bake ahead, and simply warm before serving. It’s also good cooled, if you’re not worried about it being warm for breakfast! I recommend doing a test run of this recipe exactly how you plan to make this before a special occasion! This cuts down on stress!
