Sausage and ricotta ravioli. I used sweet Italian sausage, but I did spice it up with red pepper flakes. You can use any sausage you'd like for this. I just happened to grab sweet Italian. I've made homemade pasta the traditional way by making a well in the flour and kneading right on the counter. I did that in my bolognese video. I've also done the quick version in the food processor, and it comes together so quickly! Love it, and I did that for my cheese ravioli video. However you can Judt mix it in a bowl and knead it in the counter, then you don't have to worry about beating the eggs in the well without breaking the flour wall and having eggs spill out. So either way you do it, it comes together very fast. Then I used my trust beloved pasta sheet roller attachment, got mine off Amazon, and rolled the sheets of pasta thin. Filled it with the not beautiful but very delicious sausage and ricotta filling.
I paired this ravioli with a simple marinara sauce. My family devoured it and said it was great. If you ever have any extra ricotta and sausage mixture, you can put it right in the sauce!
Homemade ravioli is not as daunting as it seems. Come make some pasta with me!!
Pasta:
2 cups all purpose flour, heaped (300g)
3 eggs
2 egg yolks
Marinara:
1/2 onion, chopped
2 teaspoon garlic
1 tablespoon olive oil
2 tablespoons tomato paste
1 (28 oz) can crushed tomatoes
1 teaspoon seasoned salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon brown sugar
1/2 cup parmesan
Sausage Ricotta Filling:
1 lb Sausage (I used sweet Italian)
1/2 onion, chopped
1 Tablespoon garlic
15 oz Ricotta
1/3 - 1/2 cup parmesan
1 tablespoon parsley
1 teaspoon red pepper flakes
1/2 teaspoon seasoned salt
1/4 teaspoon black pepper
