Jack Daniel's is not a bourbon - it's a Tennessee Whiskey. Jack Daniel's is dripped slowly - drop-by-drop - through ten feet of firmly packed charcoal (made from hard sugar maple) before going into new charred oak barrels for maturing. This special process gives Jack Daniel's Tennessee Whiskey its rare smoothness. It's this extra step - charcoal mellowing – that makes Jack Daniel's a Tennessee Whiskey.
Who invented charcoal mellowing
Alfred Eaton is generally credited with inventing the charcoal mellowing process in 1825, commonly called the Lincoln County Process “named after the county in which the original Jack Daniel’s distillery was located”. Most sources dispute this however as the process previously called charcoal leaching has been used as a process for thousands of years and was part of how Nathan ‘Nearest’ Green taught Jack Daniel to make whiskey.
How does charcoal mellowing work?
The distillate runs through a column filled with sugar maple charcoal, which removes a large part of the rough aromas and results in a softening of the distillate. This process is therefore also known as charcoal mellowing.
