Gaskets are are so important in the kitchen, from the tears that the bacteria will start to form in, to the the leakage in air where your compressors are working two to three times as hard as what they need to.
If you go in and a gasket's not sealing, the unit, if it's set at 42 degrees, it will run continuously to try to get to that 42 degrees, which puts a big strain on the compressor. Over time, if they don't fix that gasket and it's continually running, then the next thing to go out is the compressor's going to burn out, which is a huge expense compared to the cost of a gasket.
So many commercial kitchens just automatically go to their refrigeration guy to have gaskets replaced. The problem with a refrigeration company handling gaskets is it's out of their business model.
