Who doesn't love crispy and well-roasted young lamb? Exactly, we don't know such a person either 😉
We went to a mountain village with the intention of getting locally raised lamb and preparing it to be roasted on a spit in the old-fashioned way! The most important thing was to season it well with salt, and then tightly secure it on the spit to avoid issues while spinning.
We made a mixture consisting of oil, beer, and salt, and every 15 minutes, we would baste the lamb with it so that it would eventually become crispy. After nearly 4 hours of slow rotation over the moderate fire, we took the lamb off and let it rest for half an hour to cool down, and them it was ready for serving!
