Making masala paste :
1. Papaya : 8 pieces
2. Onion : 1 medium size
3. Garlic cloves : 20 to 25 nos
4. Ginger : 2 inch long
5. Green chilli : 7 nos
Take a bowl and add:
6. Mutton pieces : 1 kg
7. Add the above paste
8. Cumin seed powder : 1 tsp
9. Turmeric powder : 1 tsp
10. Red chilli powder : 1 tsp
11. Coriander powder : 1/2 tsp
12. Kashmiri red chilli powder : 1 tsp
13. Salt : 2 tsp
14. Garam masala powder : 1/2 tsp
15. Curd : 3 tbsp
16. Mustard oil : 2 tbsp
Mix them well and marinate overnight.
Now take kadai and add:
17. Mustard oil : 200 ml
18. Bay leaves : 3 nos
19. Black cardamom : 2 nos
20. Cinnamon : 2 pieces
21. Cardamom : 3 nos
22. Sliced onion : 3 big size
23. Sugar : 2 tsp(caramelize)
Add marinated mutton in kadai, cook with low to medium flame. Add :
24. Salt : According to taste, keeping in mind the amount of salt was used during marination.
Cook the mutton up to 80 % boiled. Add tea liquor, 250 ml. Cook the mutton with low to medium flame till fully boiled.
