Now cooking with "Jin" isn't one of the most spoken of things but don't worry we about to change that. Because cooking with #JinGin is absolutely delicious and fun!
This recipe is so simple BUT super impressive! Curing is one of my favourite cooking methods because it really transforms the ingredients tremendously. Basically in simple terms, what we try and achieve with curing is to draw out all the moisture of the ingredients (using salt) and thus preserving the food to maintain (and transform) its flavour.
I used the Tomato and Sweet Piquant Peppers Jin Gin for this recipe to really bring across that savoury flavour to the sweet salmon. The result is this impressive and seriously addictive salmon. Imagine salmon sashimi (raw slices of salmon) went to private school. Its a must-try.
