This salad from Nice in the South of France is pretty well known internationally. You'll find a huge variation in ingredients for salade nicoise , but the basic elements should be black olives, tomatoes, green beans (maybe), and seafood, either anchovies or tuna. And of course, an olive-oil-based dressing. Salade Niçoise is best eaten at a harbourside café on the shores of the Mediterranean, but if you can't manage that, you can make this delicious French salad at home.
