SPAGHETTI WITH 3 TOMATOES

180 GR OF LINGUINE
50 GR PACHINI TOMATOES
50 GR DATTERINI TOMATOES
50 GR YELLOW TOMATOES
EXTRA VIRGIN OLIVE OIL
100 GR OF PARMIGIAN
FRESH BASIL
TWO CLOVES OF GARLIC
SALT AND PEPPER
PROCESS
START WASHING THE TOMATOES AND CUT THEM INTO TWO PARTS, CLEAN THE GARLIC, CRUSH IT WITH A KNIFE AND ADD IT TO A FRYING PAN WITH 4 Tbsp OF EXVERGIN OLIVE OIL
ADD THE TOMATOES INTO OLIVE OIL AND GARLIC COOK THEM FOR 2/3 MINUTES ON A MEDIUM FIRE, ADD A HALF CUP OF HOT WATER AND LET THEM COOK.
LOWER THE TEMPERATURE AND LET THEM COOK FOR ABOUT 20 MINUTES, WHEN ALL THE WATER FROM THE TOMATOES HAS BEEN EVAPORATED, ADD SALT, PEPPER AND PLENTY OF BASIL AND TURN OFF THE FIRE.
IN THE MEANTIME ADD THE LINGUINE IN PLENTY OF BOILING WATER ALREADY SALTED AND COOK IT FOR 6/7 MINUTES, REMOVE THE PASTA FROM THE WATER AND ADD IT TO THE SAUCE, PLACE THE PAN ON A MEDIUM FIRE, ADD A HALF CUP OF THE COOKING WATER FROM THE PASTA CONTINUE TO TURN THE PASTA WITH THE SAUCE AND COMPLETE COOKING UNTIL TO MAKE A CREAMY SAUCE ADD A SPOON OF RAW OIL BEFORE SERVING IT ON THE PLATE. SERVE WITH PLENTY OF BASIL AND PARMIGGIANO REGGIANO.
