Here's another Baiganee recipe! This is a very popular street food in Trini, and the most famous type of baiganee. This can be served with mango chutney, tamarind chutney, channa and a variety of other condiments.
Ingredients:
2 baigans or eggplants
1 1/2 cups of flour
pinch of turmeric
1/2 tsp salt
1 tsp baking powder
1/2 tsp yeast
1/2 tsp sugar
lukewarm water to make dough
Oil to fry
Condiments:
Mango chutney
Channa
