My favorite food - Grandma's Enchiladas

Disclaimer : Frying after saucing results in a very messy, bright red splatter. Grandma used to line the stove with foil to help with clean up. However, in my opinion, the mess is worth the flavor.
Enchiladas are quite varied. From household to household, grandma to grandma. These are the style that I grew up with. Ultimately what I make is very much a mixture of my grandmother and mother. I have had many other kinds and each have their own merits. They can come with a variety of other fillings too.
