In this video I’m cooking up some Pork Belly Burnt Ends RECIPE on the DRUM SMOKER. I started off by cutting the pork belly in to 1 inch cubes then seasoned like I would my competition ribs, layering the flavors with 3 different rubs, I let the pork belly rest with the rubs to start sweating out some liquid. I used lump charcoal and cherry chunks as the fuel source and brought the pit up to temp. I then placed the meat on a rack for easy transportation to the pit and it also elevated the meat higher away from the heat source. After the bark was set I put the pork belly burnt ends in an aluminum pan and added butter, Bbq sauce, juice,and a glazing sauce for the braising liquid. After getting the tenderness I was looking for I transferred the pork belly burnt ends to another tray and added brown sugar and more Bbq sauce to the pork belly burnt ends and back on the pit to finish setting the sauce.
