In this video, Johan Magnusson of Big Swede BBQ, will show you how to make double-smoked Spanish potatoes on the GMG Ledge Prime Pellet Grill
Ingredients:
3 lbs Yukon or Gold Potatoes
3 Tbs Extra Virgin Olive Oil
2 Tbs Smoked Paprika
2 Tbs Roasted Garlic
1 Tbs Smoked Sea Salt
1 tsp Smoked Black pepper
1 tsp Hickory Smoke Powder
1 bunch of Parsley
Peel and cube the potatoes.
Place in a pan with cold water and bring to a boil. Boil for 5 minutes than remove and drain the potatoes. Place in an aluminum pan.
Mix all the spices together.
Oil the potatoes and add the spice mix, Toss gently.
Set your GMG to 450F using fruitwood pellets.
Smoke the potatoes for 30 minutes and mix a few times through the cook.
Remove from grill and add finely chopped parsley.
Serve immediately.
