Ingredients:
• 2 Whole wheat Paratha or roti
• 250g Mushrooms
• 1/2 Boiled sweet potato
• 1/2 tbsp Ghee
• 1 tsp Garam masala
• Salt, to taste
• 1/2 tsp Chilli powder
• 1/4 tsp Cardamom powder
• 3 tbsps Roasted besan
• 1 Medium onion, sliced
• 5 Garlic cloves
• 3 tbsps Cashews
• Green chutney + yogurt
• Pickled onions
Method:
1. Boil mushrooms with a pinch of salt for 5 minutes. Drain and blend them with the boiled sweet potato into a smooth paste.
2. Heat ghee in a pan, sauté the sliced onions until browned, adding a splash of water to help them caramelize.
3. Add cashews, salt, and garlic to the onions, mixing everything well. Cook for a few minutes and then cool the mixture.
4. Blend the cooled onion mixture with some water to form a smooth paste.
5. In a nonstick pan, combine the onion-cashew paste with the mushroom-sweet potato paste.
6. Cook the mixture until the water dries out and starts to come together. Sift in roasted besan and continue cooking for fre minutes.
7. Add garam masala, chilli powder, cardamom powder, and salt to taste. Cook for another few minutes, then transfer the galouti mixture into a bowl.
8. Warm a paratha on one side in a pan, then flip it over.
9. Spread the mushroom galouti mixture evenly on the paratha with wet hands. Flip and fry until crispy.
10. Once the paratha is crispy, pipe some green chutney on top and mount with pickled onions.
11. Serve hot and enjoy!
