Today we'll make another modern tropical drink from "Tiki: Modern Tropical Cocktails" by Shannon Mustipher. The S.O.S Mai Tai is a slight variation to the classic Mai Tai and comes from The S.O.S. Tiki Bar in Decatur, Ga.
While the addition of a Rhum Agricole Blanc is not a new concept to Mai Tai's, many Mai Tai experts recognize that while the original rum blend included a Jamaican rum and a Martinique rum, it is generally concluded that the Martinique Rhum would have been molasses-based and not sugar cane. That means that many of the outdated "real" or "original" Mai Tais would also have some Rhum Agricole. And that's why I like this take... it's slightly different, it includes Rhum Agricole, and not pretending to be the original. It's even severed in a collins glass which while subtle, just adds to the slight differences.
I do realize that many of you may make your Mai Tais with a 100% pot still rum and Rhum Agricole, but I typically go with an Appleton Estate and maybe just a ¼ to ½ of Jamaican Pot Still. So to me, this is very different. Hamilton is also VERY Jamaican. It's a Worthy Park Estate rum and using that as your base will intensify the rum flavors in this one.
With the addition of an extra ¼ oz of Orgeat and no simple syrup, you'll get more Orgeat flavor coming through but still plenty of sweetness. The Orgeat you use will be more important. I love the Smugglers Cove version you can make at home, but that can be a pain to make, especially if you want to drink something now. Liber & Co makes an exceptional Orgreat and Liquid Alchemist is also really good. When I make Mai Tais for myself, I generally like to up Orgeat as well as I think it often gets lost in most standard ½ oz Orgeat Mai Tais.
