Salmon Ceviche is a nice refreshing salad. The first time I ever tried ceviche was at the beach front in Rio De Janeiro, Brazil. You can add any type of seafood that you like to make ceviche. I personally like salmon so I chose to make it with salmon. I have seen people use shrimp or other white fish. I believe you can also use tuna. Basically any time of seafood that is found in sushi. I find that salmon ceviche is the best. It is a super simple and quick recipe for anyone to try. It is a nice quick healthy meal or appetizer. You can also get creative with ceviche by adding pineapples or mangoes to the mix. Feel free to mix up this recipe a little bit to make it your own. This meal is inspired by my time in Rio but I am not claiming to be a Brazilian chef. I enjoy traveling and trying new food. This Salmon ceviche was one of the only mean I truly enjoyed on an extremely hot day in Brazil.
