Here is a delicious and budget friendly option for your stuffing this Thanksgiving! You see me making a lot of different recipes that could be placed on your holiday table. Many of us grew up having tables laden with family favorites every single year. There are lots of people who may not have the benefit of financial comfort and may be stressing out over the fact that they cannot put a full holiday meal out for their family at this time of year. This is my inspiration to share how to make this delicious and penny pinching version of stuffing.
I started with two boxes of quick stuffing mix, I prefer the Stove Top brand and I also prefer to use the Turkey flavor. The trick to making this semi homemade is to make it as if you were actually making it from scratch. They won't ever know you started with a box mix!
Sautee up a couple of chopped onions and a few ribs of celery. Throw in some sliced mushrooms, either fresh or canned if that is something you enjoy. What else to do you love in your stuffing? I love apples and dried cranberries, Toss in a handful or two. If you don't have dried apples, like I used, add a chopped fresh apple and cook it with the veggies. Maybe you like sausage in your stuffing! Cook a pound of bulk breakfast sausage and drain it then toss that in here as well. You can make this stuffing as close to your favorite homemade version as possible with just a little planning and thinking and tweaking.
You just basically mix up all the sauteed veggies and add in any extras that you love then mix in the stuffing packets. I did this all in a foil pan for ease of clean up. Then ladle in 3 to four cups of chicken or turkey stock. You can make bullion if you like or, you can use water. The beauty of the mix is that all the seasonings are already in there so there is no need to spend money on extra spices if you are on a tight budget.
spread the mixture evenly into a 9 x 13 pan and then pop it into a 350 degree oven for 30 to 45 minutes or as long as an hour, depending on how crunchy you like the "crust" of your stuffing. When I was a kid and my mom used to stuff the bird, I used to fight her for that crispy goodness. Now we don't stuff the bird anymore due to time and health concerns. So this stuffing casserole is an awesome alternative.
One of the things I wish to leave you all with is this. At this table there is room for everyone. There are no excuses to preparing a Thanksgiving meal large or small. Expensive or budget friendly.
