Moussaka-stuffed aubergines is based on the popular Greek dish melitzanes papoutsakia, aubergine little shoes. It's all the ingredients of traditional Greek moussaka, but presented in a different way. Basically you scoop out the flesh of the eggplant and mix it in with your dry-ish meat sauce. You then smother it with bechamel sauce, top it with cheese and slam it in the oven. Moussaka-stuffed aubergines are delicious.
