In this video you can find two variants of delicious salmon pies.
Try it and you won't regret a thing.
Ingredients for dough (mold 28 cm):
Butter (at room temperature) – 7 OZ (210 gr)
Flour – 12 OZ (350 gr)
Soured cream – 3 OZ (90 gr)
Sugar - 1 tsp.
Salt - ½ tsp.
Ingredients for filling:
Salmon -1 pound (450 gr)
Onion – 20 OZ (600 gr)
Mozzarella or processed cheese curds – 12 OZ * (350 gr)
Eggs - 3
Salt ⅔ tbsp.
Pepper-1 tsp
Herbs de Provence - 1 tbsp.
Yolk and 1 tsp. water – to wash the top
1. Add salt, sugar into the flour and stir. Add the butter, mix well with your hands and add the soured cream. Knead the dough a little bit. There is no need to refrigerate the dough.
2. Roll out ⅔ the dough and put into a mold or pan**. Put it aside for the time of making the filling.
3. Sauté onions in vegetable oil until golden and transparent.
4. Remove scales from the salmon, wash. Debone and cut it roughly.
5. Mix the fish with onions and mozzarella. Add salt, pepper, herbs de Provence. Add the eggs, stir.
6. Spread the filling in the mold.
7. Roll out the remaining dough, cover the pie.
8. Mix the egg yolk with 1 tsp. water, wash the pie.
9. Prick the top all over with a fork.
10. Bake in a preheated oven at 350°F (170 °C) for 1 hour.
Serve lukewarm.
* Pie with the processed cheese tastes better, the texture of the filling and the taste of the pie itself a bit better.
** It’s better to bake this pie in a metal baking mold or in a tray.
