Flat iron steak recipe: Pat a 1 to 1 1/2 pound flat iron steak dry with paper towels and allow to come to room temperature for about 30 minutes. Heat 2 tablespoons of fat in a cast iron pan. I use butter and bacon drippings, or you could use olive oil and butter. Season steak with salt, pepper, garlic powder and onion powder. Sear on each side for 1-2 minutes, then turn the heat down to low and cook for 5 minutes on each side for medium rare.
