Speculoos cookies can be used in many ways. Kids love their spiced taste. So I made them into a paste and used them in a mochi, with some cream to keep it light ;-) I hope you will like it.

Ingredients (for 16 mochi) :
- 30g speculoos cookies
- 1 tsp brown sugar
- 1 tbsp whole milk
- 60g heavy cream, more than 35% fat if possible
- 1.5g cremfix if your cream is less than 35% fat
- 9 to 10g sugar
- 90g glutinous rice flour
- 180ml water
- 1/2 tsp glucose syrup
- 30g sugar
