Potato & Egg Salad (Olivier Salad – Russian Salad)
This salad is a family favourite and guaranteed you will have no left-overs! Served as a side dish or all on its own.
In my version of the Potato & Egg Salad (Olivier Salad ) we’ve added corn. It’s also common to garnish with Dill.
Olivier salad, also known as Russian Salad, was originally invented by Lucien Olivier for the Hermitage restaurant in Moscow in the 1860’s; it was then adapted by Ivan Ivanov, who later sold the recipe for publication. Over the years, it gained in popularity not only in Russia, but throughout the rest of the Europe.
NOTE: The portions given in the video are doubled to produce a large salad.
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
* 6 cooked potatoes
* 3-4 cooked carrots
* 2 Cups peas
* 2 Cups corn
* 6 hardboiled eggs
* 6 pickles
* 1 - 1½ Cups olive oil mayonnaise
* finely chopped cilantro
* 1 tsp ground pepper
* 1 tsp salt
